Picking and Choosing

We are in that exciting and frustrating stage of trying to choose cabinets, countertops, features, floors and a few appliances. So far we're doing pretty well except we don't know where to get the cabinets. I reeheeheeally don't want to go thru Home Depot or Lowe's so we're going to try one of the smaller shops around town. We found a screamin' deal on granite countertops on craigslist. We weren't even going to try for granite but it's such a great deal it's less than laminate. Woohoo! We're going with carbonized, vertical grain bamboo flooring (which we're also getting at an amazing price off craigslist). We have a basic idea for cabinets- natural- or toffee- colored birch in a shaker style. Obviously it could change when we decide where to buy them. We're hoping to be able to afford pull-out shelves in all the bottom cabinets, a built-in spice rack, lazy susan's in the corners, at least one appliance garage- you know- some of the cool stuff.
The hard part isn't choosing the stuff- it's going to be putting in the beam where we're tearing down 1/2 the load-bearing wall to open the kitchen up to the dining/living rooms and put in a countertop eating area. We're also walling in the window and door in the back corner of the kitchen so we have more countertop space. Since we'll lose the light from that window I'm trying to convince Dave to put a skylight in. He says he hates doing them, but with one tiny window in the kitchen we'll either need a skylight or some really creative and possibly expensive lighting. Maybe without the walls blocking the light from the dining and living rooms it won't be necessary. He'd be happy to win that one!
If anyone has a great idea for an inexpensive dual fuel range that lies flush with the counter and preferably has a down-draft vent, let me know. The key words here are INEXPENSIVE and DUAL FUEL. Anyone who knows me knows spending over about $1000 on a range is a joke since cooking is not my favorite hobby.
I'd love feedback from anyone who has recently built or remodeled a kitchen!
